Cantonese Steak Recipe
Cantonese food is a special type of Chinese cuisine, which comes from
the Guangzhou (Canton) region in southern China. This regional food is
popular throughout China, and Cantonese chefs receive wide acclaim
across the country. Cantonese food is also especially popular outside of
China, where it can be found in most major Chinese restaurants. While
China is known for its spices, Cantonese dishes traditionally use very
few. Instead, these meals allow the natural flavors of the ingredients
to come through. Most dishes are, however, served with sauces to keep
moisture and flavor. Meat is a vital part of most Cantonese meals and is
frequently cooked through stir-frying. Thus, this steak recipe is a
great reflection of Cantonese cooking. This main dish may be accompanied
by a first course of Cantonese soup, which is generally slow cooked with
a clear broth. It can also be followed by a traditional Cantonese
dessert like a sesame milk custard or red bean soup.
Ingredients:
- 1 1/2 pounds flank steak or filet mignon
- 1 tablespoon cornstarch
- 1/4 teaspoon ground ginger
- 1 garlic clove (minced)
- ¼ cup tablespoon soy sauce
- ½ cup white wine or rice vinegar
- 1 teaspoon sesame oil
- 2 medium green bell peppers (cut into strips)
- 1 medium onion (sliced)
- Vegetable oil (as needed for cooking)
- Green onions (for garnish)
Directions:
- In a small saucepan, combine cornstarch, ginger, soy sauce,
vinegar, and sesame oil. Bring ingredients to a quick boil while
stirring. Continue stirring until sauce thickens to desired
consistency. Remove from fire and set aside.
- Cut steak into thin strips suitable for stir-frying. Be sure to
trim as much fat from the steak as possible.
- Heat a wok or skillet over medium-high heat. When hot, add oil
and garlic.
- Immediately add steak to wok and stir-fry until cooked through.
- Take out the steak from wok and put it on a different container.
- Add more oil to wok and toss in peppers and onion.
- Cook vegetables until slightly tender.
- Return steak to wok with vegetables and add sauce mixture.
- Mix all ingredients together and heat until warm.
- Garnish with green onions and Serve over rice if desired.
- Recipe serves approximately four people.
Variations:
Vegetable lovers can add some more Cantonese-style produce to their
meal. Great options are mushrooms, bean sprouts, water chestnuts,
carrots, celery and cabbage. Tofu can also be added to this dish or used
as a substitute for the steak. Additionally, instead of rice, you can
also serve this dish with rice noodles or over lo mein.
For a juicier dish, steak can be marinated in the sauce ingredients for
four to eight hours. If choosing this method, be sure to reserve the
remaining marinade to use as a sauce once the meat and vegetables are
cooked.
If you want to take a healthier twist on this dish, replace the rice
or noodles with a lettuce bowl. You can also use lower sodium soy sauce
and decrease the amount of oil used in frying.
